Scrambled Quail Eggs Four Styles On Shiso, with a Frisco cocktail
Eat about half of each egg by itself and then roll the remainder in the shiso leaf and eat that. The tarragon/shiso combo is particularly nice.
This is a definite winner & I'll do it again (& photograph better – I was hungry). Trifle too heavy on the salt this time. It's pretty, but powerful.
The negi one is the clear winner – probably will do that as an appetizer or amuse bouche at a dinner party someday.
Frisco
cocktail against a lamp shade
2oz Rye
1/4oz Benedictine
3/4oz lemon juice
garnish with lemon slice
Bacardi Cocktail (tangerine syrup variation)
Alas, even though I like Sweet Tart candies this was just too tart for me. I am pretty sure I mixed it right and it's just not my kind of drink. Even adding a bit more tangerine simple syrup and more ice (turning it into a highball presentation) didn't do it and it was finally resolved with the addition of ginger ale.
Sad. My first "huh?" from the specially selected cocktails illustrated in Paul Harrington's book & on Hotwired.
